Jellied pie with chicken - the basic principles of cooking

Even an inexperienced housewife can cook such a pie. The beauty of such baking is that there is no need to bother with the dough for a long time. It is enough just to combine all the ingredients and knead the dough with a spoon, the consistency is like on a fritters.

The dough is prepared on the basis of sour cream, kefir or mayonnaise with eggs. All liquid ingredients are combined in a bowl, salted and whipped with a whisk. The flour with soda or baking powder is sifted and gradually added to the liquid mixture until the dough of the required consistency is obtained.

For the filling, use chicken fillet or breast. The meat is cut into small pieces. It is advisable to pre-marinate the chicken so that the filling does not turn out fresh. You can use both fresh and smoked chicken. You will also need onions. It is cleaned and chopped with thin half rings or feathers. For a change, the filling can be prepared with cheese, potatoes, cabbage or other vegetables.

Pie is formed in two ways. In the first case, the filling is laid out at the bottom of the mold and poured with dough. In the second: half of the dough is poured, the filling is placed on it and pour in the remaining dough.

Pouring is also called pies, in which the base is prepared from shortcrust pastry, and the filling is poured with sauce based on sour cream, cream, mayonnaise with eggs.

Recipe 1. Jellied Chicken Pie

Ingredients

Dough

salt - two pinches;

sour cream - 50 ml;

slaked soda - 3 g;

kefir - 50 ml;

flour - 300 g;

mayonnaise - 100 g;

two eggs.

Filling

700 g chicken fillet;

salt;

two large onion heads;

ground black pepper.

Cooking method

1. Combine in a deep bowl all the ingredients for the dough, except flour. Whisk with a whisk until smooth. Gradually introduce the flour and continue whisking until you get the dough as a pancake.

2. Rinse the chicken fillet, clean from films and excess fat. Grind the meat into small pieces.

3. Peel the onions from the husk, rinse and crumble with thin feathers or half rings.

4. Grease the mold with margarine or butter. Chop the breadcrumbs. Put chicken into pieces at the bottom. Lay onion on top of the meat. Lightly salt.

5. Pour all the dough. Leave for half an hour for the dough to saturate the filling. Put the cake in the oven for forty minutes. Bake at 180 C. Remove the finished baking, cool to a warm state and cut into slices.

Recipe 2. Jellied pie with chicken and potatoes

Ingredients

Dough

130 g of flour;

salt;

200 g of sour cream 20%;

5 ml of vinegar;

30 g mayonnaise;

Filling

300 g chicken;

freshly ground black pepper;

two potatoes;

salt;

green onions - a few feathers.

Cooking method

1. Beat eggs with a whisk in a deep bowl. Add mayonnaise, flour, soda, slaked with vinegar, sour cream and flour to the egg mixture. Continue whisking with a whisk until you get a homogeneous dough as a pancake. We make sure that there are no lumps. Leave the dough for half an hour.

2. Peel the potato, and cut into thin slices using a special device. Wash my chicken fillet and dry with napkins. Cut the meat into small pieces. Rinse green onions, dry on a paper towel and finely chopped.

3. We cover the bottom of the detachable shape with parchment. Lubricate it and the sides of the mold with oil. Pour half the dough into it. On top of it lay half the slices of potatoes.

100 g margarine;

400 g chicken;

200 g mayonnaise;

Cooking method

1. Peel the onions. Chop it into thin quarter rings.

2. Peel the mushrooms and wipe them with a damp towel. Mushrooms are not recommended to be washed, as they absorb a lot of water. Cut the mushrooms into plates.

3. Rinse the chicken under the tap, pat dry with napkins and chop finely.

4. Sift flour with baking powder. Chop the margarine in small pieces, add to the flour and grind with your hands into the crumbs. Add the egg and water. Knead the dough, collect it in a bowl and put it in the refrigerator, wrapping it with cling film.
