Imagine you are sitting in the morning with a cup of coffee and delight yourself with a chocolate muffin. If this picture is to your liking, then you are welcome to our recipes.

Especially for those who have long wanted to bake chocolate muffins, but did not dare, as well as for those who have already tried, but failed, we have chosen the perfect test. This is dough on semolina. It turns out mega chocolate, very tender, moderately friable and moderately sweet. Manka is not felt at all.

In addition, this dough is suitable for baking large muffins in the oven and in the slow cooker. Top with muffins is best sprinkled with powdered sugar. But you can make icing.

Ingredients:

Semolina - 1 cup (200 ml);

Milk - 280 ml;

Flour - 200 g (1 and 1/3 cup);

Flavourless vegetable oil - 120 ml;

Cocoa - 3 tablespoons;

Baking powder - 12 g (1 tablespoon without slide);

Sugar - 1 cup;

Nuts - ½ cup.

Recipe:

In a large and easy to knead bowl, mix sugar and semolina. Pour them with warm (not hot) milk. Mix well and let the semolina swell for 40 minutes. This stage is very important. If the semolina does not swell, then in baking it will be nasty to creak on the teeth.

In another bowl (or in the same), mix the vegetable oil, flour, cocoa and baking powder. Mix and add the mixture from semolina. The semolina should settle to the bottom, and there will be a small layer of milk on top.

Mix the dough until smooth. It is most convenient to use a mixer with nozzles for the dough. It turns out pretty thick.

Lastly, add chopped nuts. They can be replaced with raisins or chocolate chips.

In the cupcake molds we spread the dough so that it fills 2/3 of the volume. For chocolate lovers, we recommend putting a piece of chocolate bar in the center of the muffins (dough - chocolate dough). After baking, the chocolate will melt and you will get muffins with liquid chocolate inside.

We send cupcakes to the middle shelf of the oven for 30-35 minutes at 180 degrees. Focus on your oven, you may need a little more, or vice versa, less time for baking. After 25 minutes, check that the muffins are ready. They should rise well and be dry inside (check with a splinter).

Ready-made muffins are best served completely chilled, so they will reveal their rich chocolate flavor.
