Winter pickles - basic principles of cooking

The first ingredient is cucumbers. Before cooking, you need to thoroughly wash them, it will be better if you leave them in the water for half an hour. This will remove all the dirt from them, the nitrates will leave and the cucumbers will be more crispy.

You do not need to peel vegetables, cut off the edges too, this is not necessary.

You need to prepare all the greens that will be used. In some cases, these are horseradish leaves, dill, and more. Wash everything thoroughly.

Garlic needs to be peeled and washed. Prepare a lot of garlic.

For pickling, use small cucumbers so that they can be tightly placed in a jar.

Having opened the pickles, you can come up with a lot of ways to serve them.

In one of our recipes, you will see that you can make a special preparation for pickle, but the second part of the jar is better to put on a vitamin salad. Also, cucumbers will become an independent dish. Serve pickles for the winter with canned tomatoes or eggplant.

Classic Pickles

Ingredients:

• 4 kilograms of small cucumbers;

• 1.5 cups of salt;

• 10 stalks of dill;

• 5 large leaflets of horseradish;

• 5 pods of hot pepper.

Cooking method

Prepare cucumbers (basic principles for preparing pickles for the winter). Wash the spices, let them dry.

Make a pickle. Pour five liters of water into a large container, stir three glasses of salt in it. The salt should completely dissolve. If the brine is not salted, add salt until fully cooked.

Cut hot pepper, do not finely, one slice - 2 centimeters.

At the bottom of a deep and wide container, put half of the horseradish leaves, pepper on them. Pour all this with cucumbers, and on top make another layer of leaves and spices.

Pour cucumber with brine so that it completely covers all the ingredients.

Leave the cucumbers in this position for at least three days. But you need to remember to cover them with a flat plate, namely a plate, not a lid. Put a press on a plate. It can be anything, if there is nothing suitable at hand, take a three-liter jar of water and place the lids on top.

A day later, a white film forms on the brine surface - these are lactic acid bacteria, they are absolutely harmless.

After the cucumbers are well salted, drain the brine into a separate container, but do not pour at all.

Cucumbers need to be washed well. Greens and spices are no longer needed, throw them out.

Sterilize the banks, this can be found at the end of the article. Put cucumbers tightly in them.

Put the brine on the stove, bring to a boil, remove. Then pour into banks and leave for 20 minutes. Over time, drain and boil the brine again. Then repeat everything again, but no longer pour the brine.

Now use tin lids and a special key to close the jars. In winter, you will have a wonderful addition to all dishes.

Homemade Pickles

Ingredients:

• 1 kilogram of cucumbers;

• 10 flowers of dill;

• head of garlic;

• 10 branches of cherries;

• Horseradish leaves;

• Currant leaves.

Cooking method

Put chopped garlic on the bottom of the sterilized jars (cut the teeth into 4 parts), the whole dill and horseradish leaves. Spread cucumbers on top, try, reaching the middle of the jar, lay out the branches of cherries, then continue the layer of cucumbers. Put currant leaves on the top.

Pour the cucumbers with brine. To do this, boil water; add salt, about one glass per 5 liters.

Banks in this position should be kept under nylon covers for at least 3 days. The lids should be swollen, this will mean that the snack is ready. You need to open the can, let out unnecessary air and close it again.

You can store cucumbers in the refrigerator for up to 5 months.

Cucumbers without vinegar

Ingredients:

• Five kilograms of cucumbers;

• Five pods of hot pepper;

• 10 cloves of garlic;

• Two horseradish roots;

• Three sprigs of tarragon;

• Five leaves of marjoram;

• Dry dill.

Cooking method

Cook brine. To do this, boil water and add salt to it. The approximate amount of salt per five liters of water is 300 grams.

In clean, sterile jars (read in useful recipes for cooking pickles for the winter) put spices on the bottom, then one third of a serving of cucumbers, count on one three-liter jar. Put spices on top of the vegetables again, so do it one more time until the jar is full. Pour the brine into the jar.

Close the containers with lids and leave for five days. Then drain the brine, boil over and pour back into the jar. Close with tin lids and consume in the winter.

Miracle cucumbers

Ingredients:

• 1 kg of small cucumbers;

• 3 kg of large cucumbers;

• Currant leaves;

• Horseradish root and its leaves;

• Garlic.

The first thing you need to do is pickle. For 1 liter of water - 2 tablespoons of salt. Boil it.

Spices, leaves, herbs are laid out in three levels. The first is the bottom of the can, the second is the middle, the third is covered with cucumbers.

Transfer cucumbers between layers, and pour them with hot brine. Give fifteen minutes to brew.

Mix tomato juice with salt and sugar.

Drain the boiling water, boil again and again connect with the cucumbers. After 15 minutes, pour it out of the can.

Crush one tablet of aspirin with a knife or spoon, sprinkle cucumbers with it. So they will not wander for a long time.

Pour cucumbers with tomato juice and store in a cool place.

Pickled Cucumber Salad for the Winter

Vodka Pickles

Ingredients:

• 2 kilograms of cucumbers;

• 100 milliliters of vodka;

• Bay leaf;

• 1.5 water;

• Horseradish root;

• Dill;

• Currant leaves;

• Oak leaves;

• Sugar;

• salt;

• Ground pepper;

• Pepper peas.

Cooking method

To make a brine, prepare cold water and dissolve sugar and salt in it.

At the bottom of the cans lay all herbs, spices and only on top of the cucumbers. Pour everything with brine. Add vodka to each jar, approximately 100 milliliters per jar. Close the capron lids and hide the jars in a cool place.

Five days later, open the cans, carefully remove the resulting foam. Put the brine on the stove, bring to a boil and cook for no more than 5 minutes.

Pour hot pickle into the jars and roll them up, hide pickles for the winter in a warm place for two days.

Spicy cucumbers

Ingredients:

• 3 kilograms of cucumbers;

• 1 pod of chili pepper;

• 2 pods of hot pepper;

• 3 heads of garlic;

• Horseradish root.

Cooking method

In pre-sterilized jars put the peeled and chopped horseradish root. On it crushed hot peppers and chili. From above, determine the cucumbers in the jar, they must reach the very top. Cover with garlic at the end.

Boil water (2 liters) and dissolve 4 tablespoons of salt in it. Do not let the water cool, immediately pour it into jars.

After a day, drain the brine, boil, fill again.

Having rolled up the cans with pickles for the winter, wrap them in a warm blanket.

Winter salad

Ingredients:

• 1 kg of tomatoes;

• 1 kg of cucumbers;

• 2 large onions;

• Hot pepper pod;

• Garlic;

• Dill color;

• 2 cloves;

• Brine.

Cooking method

At the bottom of a sterile jar put onion sliced ​​in circles. On it - cloves and add hot pepper. Put thin circles of tomatoes on top. They should be covered with the same thin plates of cucumbers.

Add 2 tablespoons of vegetable oil to the brine.

Continue spreading cucumbers and tomatoes, put garlic between their layers.

The most delicious cucumbers

Ingredients:

• Cucumbers - 2 kilograms;

• Garlic - 2 heads;

• Horseradish root;

• Horseradish leaves;

• Oak leaves;

• Cherry leaves;

• Sweet cherry leaves;

• cloves;

• Italian herbs;

• Vinegar;

• Pepper peas;

• Sugar.

Cooking method

Put three liters of water on the stove, after boiling add vinegar, salt and sugar to it.

In a blender, chop the leaves of fruit trees and oak, add horseradish root to them and chop again. Add unpeeled, but washed garlic, peppercorns, Italian herbs to the mixture.

Combine the hot brine and spice mixture to create a creamy consistency.

Wash the cucumbers; cut off the extreme parts. They need to be cut in half along.

Now, at the bottom of the can, you need to lower the cloves and carefully place the cucumbers. Pour everything with the resulting herbal mixture, if it turns out to be too thick, dilute with brine.

On top of each jar you need to put one tablespoon of salt.

Close all cans with nylon caps, shake. After five days, replace the lids with tin.

Winter pickles - secrets and tips

  • You use cans to make any of these recipes. Previously, they need to be processed qualitatively so that the cucumbers do not explode or sour. To do this, using a double boiler or a special nozzle for pots, treat all the inner walls with steam. But before that, wash them well with soda. The lids should be boiled for two to three minutes. Give the banks time to cool.
  • After preservation, be sure to wrap the jars, otherwise the fermentation process will activate, and the cucumbers will disappear or lose their taste.
  • If you want the cucumbers to not languish for a long time and use the winter recipe for the near future, add sugar to the brine, about one percent of the total weight of all products.
  • In order for the brine to evenly cover all the ingredients of the can, place the cucumbers in an upright position.
  • You can affect the preservation of the crunch of cucumbers. You need to prepare for this in advance. About five hours before cooking pickles for the winter, fill them with cold raw water so that it completely covers them. It will be better if they are not compressed, but will be in free space.
