Stuffed potato patties - general principles of preparation

There are many ways to prepare potato patties with a filling. Moreover, not only the toppings, but also the potato mince itself can be different.

Stuffing is made from raw and boiled potatoes, and from mashed potatoes. For the first option, it is enough to peel and grate the potatoes, and then squeeze out any excess liquid so that the cutlets do not break off during frying. Potatoes boiled or baked in their uniforms should be grated. Well, everyone knows how to do mashed potatoes: here they boil the vegetable and crush it in a bite.

An egg is added to the prepared forcemeat as a binding ingredient, salt and spices are used for taste. In addition, additional ingredients can be added to the potato mince, which will give the dish a new taste: grated cheese, carrots, bell peppers, herbs, vegetable sauteing and others.

As a filling, you can put absolutely everything that your heart desires, or what is in the refrigerator. The scope for imagination is unlimited. Eggs, cheeses, ham and sausages, meat and minced meat, mushrooms, vegetables, fish - this is not a complete list. All ingredients for the filler are pre-fried or boiled, cut.

Formed potato patties with a filling can be baked and fried in a pan. If the potatoes have already been cooked, then the frying time requires a minimum of 5-7 minutes, if the potato mince was made from raw vegetables, the heat treatment time of the cutlets increases to 15-20 minutes.

Such cutlets are especially tasty with heat, but even when they are cooled they do not lose their taste. But it’s better not to cook them for the future, after a night in the refrigerator they are inferior in taste to those that were eaten on the day of preparation.

Recipe 1. Potato patties stuffed with Adyghe cheese

Ingredients:

• six medium-sized potatoes;

• two eggs;

• 100 grams of Adyghe cheese;

• 50 grams of flour;

• 30 ml of vegetable oil;

• three tablespoons of breadcrumbs;

• spices, salt.

Cooking method:

1. Rinse and peel the potatoes, rub it on a small segment of the grater, squeeze out the liquid.

2. Add eggs to the potato mass, to taste spices and salt.

3. Pour flour and mix thoroughly.

4. Cut the cheese in equal slices.

5. We take minced potato with wet hands, form a cake.

6. Put cheese in the center of the tortilla, form an oblong cutlet, closing the cheese inside it.

7. Bread the cutlets in breading and fry over low heat, put on a hot oil, on both sides until an appetizing golden brown crust forms.

Recipe 2. Potato patties stuffed with cheese and ham

Ingredients:

• one egg;

• five potatoes;

• 120 grams of hard cheese;

• vegetable oil;

• 120 grams of ham;

• spices, salt;

• 3-4 tablespoons of flour.

Cooking method:

1. Peel the potatoes, put them in a pan, fill them with water. Cook, salting after boiling, until tender.

2. Drain the water, mashed potatoes in mashed potatoes.

3. Cool mashed potatoes, add flour and egg, spices and, if necessary, salt to the mass. Mix.

4. Cut the ham and cheese into small cubes, mix. Here you can add a little sour cream or softened butter, but even without these ingredients, the patties are juicy.

5. We form cakes from the potato mass, in the center of which we put one or two tablespoons of a mixture of cheese and ham.

Ingredients:

• three to four potatoes;

• three eggs;

• a tablespoon of sour cream;

• 10-12 feathers of green onions;

• flour or bread crumbs;

• butter.

Cooking method:

1. Peel the potatoes, rinse, cut into several parts and boil until cooked in salted water.

2. We take out the finished potatoes from the broth, knead with a fork or a crush in mashed potatoes.

3. Drive one egg into the puree, add salt and pepper to taste.

Ingredients:

• 700-800 grams of potato;

• six eggs;

• 100 grams of cheese;

• 100 grams of boiled sausage;

• onion;

• 100 grams of breadcrumbs;

• parsley, salt, pepper.

• vegetable oil.

Cooking method:

1. Boiled peeled potatoes and make mashed potatoes.

2. Boil four eggs, and finely chop. Add the sausage chopped into small cubes and grated cheese.

3. Peel the onion, finely chop and passer in vegetable oil until soft and golden. Add it to the egg filling.

4. Pour salt and pepper into mashed potatoes, drive in two eggs, mix well.

Ingredients:

• one and a half kilogram of potatoes;

• 250 grams of champignons;

• two onions;

• a spoon of sour cream;

• salt, spices;

• for frying sunflower oil;

• approximately five spoons of breadcrumbs.

Cooking method:

1. Wash the potatoes thoroughly using a soft brush or sponge. We are drying.

2. Put on the wire rack in the oven, bake until tender for 20-30 minutes, depending on the size of the potatoes.

3. Carefully remove the finished potatoes, cool, peel, grate.

4. Peel and chop the onion. Spread in hot vegetable oil, fry until softened.

5. Rinse the champignons, dry, cut into small cubes. Spread onion, salt a little and fry the mushrooms until cooked. At the end of cooking, put sour cream, mix.

10. Carefully remove the finished patties, prying them from the bottom with a spatula.

Recipe 6. Potato patties stuffed with minced meat in the oven

Ingredients:

• 10 medium-sized potatoes;

• 300 grams of boiled beef meat;

• two onions;

• half a glass of flour;

• vegetable oil;

• salt;

• two eggs;

• 50 grams of butter.

Cooking method:

1. Boil peeled potatoes in salted water until tender, add half the butter, mash in mashed potatoes.

2. Once the mashed potatoes have cooled, add the eggs to the mass, to taste the salt and flour.

3. Thoroughly mix everything so that the minced potato is tender and homogeneous.

4. The boiled meat is cut into very small cubes or passed through a large grill of a meat grinder.

5. Peel the onions and cut them into cubes, fry in oil until golden brown. Add minced meat, salt, fry until blush.

6. With wet hands, we make a cake from potatoes, put a spoon into the center of the minced meat fried with onions, and mold the cutlet.

Ingredients:

• 8-10 potatoes;

• 220 grams of chicken breast;

• egg;

• 50 grams of dry non-sweet crackers;

• clove of garlic;

• vegetable oil;

• salt, pepper, oregano.

Cooking method:

1. Wash the breast and boil in salted water until tender. Cut into small cubes.

2. Peel and chop the garlic, mix with salt, oregano and pepper.

3. Mix the garlic mass with chicken.

4. Peel the potatoes and grate. After squeezing out the excess liquid, mix the potatoes with the egg and a small amount of salt.

5. We place the crackers in a large dry bowl and grind using a crusher.

6. Form from potato mass with chicken inside the patties, roll them in cracker crumbs.

Ingredients:

• 350 grams of finished mashed potatoes;

• carrot;

• 130 grams of crab sticks;

• egg;

• hard cheese to taste.

Cooking method:

1. Cut the crab sticks lengthwise into two parts.

2. Peel the carrots and rub on a small segment of the grater.

3. Cheese rubbed with chips.

4. Mix mashed potatoes with cheese, carrots and eggs. If necessary, add salt, spices to taste.

5. We form oblong cutlets, laying in the middle half of the crab stick.

6. Fry the patties with the filling until golden on both sides in vegetable or butter.

Potato patties stuffed - tricks and tips

• To prevent cutlets from falling apart when forming, be sure to wet your hands in water.

• Also, so that the cutlets do not fall apart, the potato cake can be put on cling film, and then put the filling. In this case, the cutlet is formed by turning the film, after it is removed and the formation is completed, pressing the product with palms.
