Small, neat cupcakes were so loved by children and adults that they even earned their own name - muffins. Unlike products of more familiar sizes, muffins began to fill with various additions. It turned out a whole family of pastries with sweet and, on the contrary, hearty “fillings”.

Muffins with sausage, cheese, ham, greens are perfect if the children are capricious and refuse a hearty dinner. Well, "for dessert" you can give the same cupcakes, only with the appropriate addition. For example, with cherries.

Cherry Muffins - General Cooking Principles

• Muffins are baked in the oven, in special metal or silicone molds for baking small muffins. The most convenient are large composite forms in which there are several recesses for cupcakes at once.

• It is very easy to prepare the dough for such baking and even the most inexperienced culinary specialist can handle it. The main thing is to strictly follow the recipe and observe the basic rule of kneading such a dough - loose and liquid components are mixed separately in two different containers and only after that they are combined. At the same time, it is necessary to add a liquid mixture to a dry one, but not vice versa.

• Dough for muffins with cherries can be kneaded on sour cream, kefir, yogurt, milk with the addition of cottage cheese or sour cream. Dietary light muffins are baked from dough on cottage cheese with oatmeal.

• Be sure to put eggs, cherries, granulated sugar and a special dough cultivator in the dough for muffins. In this capacity, both baking soda and commercial powder-baking powder are commercially available. Often chocolate (black or white) is added to it, nuts or a cream prepared according to a special recipe and flavored with vanilla.

• Cherry for muffins can be fresh, dried or frozen, which must first be thawed. Berries are added to the dough in whole or in slices. They are placed with kneading or added to the dough already laid out in forms.

• Forms must be greased with vegetable oil or grease and line their bottom with parchment paper, which is also well greased. Often in the form put special paper blanks-molds available on the market.

• Forms with dough for muffins are placed only in a hot oven, and baked at the temperature specified in the recipe. On average, baking takes from 20 to 30 minutes, but specifically it depends on the oven.

• Ready-made pastries are removed from the molds only after cooling and, if desired, decorated.

Cottage cheese muffins with cherries

Ingredients:

• pitted cherries - 150 g .;

• 70 grams of sugar;

• 150 ml of pasteurized milk;

• 72% high-quality butter - 60 gr.;

• 9% cottage cheese without grains - 150 gr.;

• two eggs;

• 5 gr. baking powder for dough;

• 200 gr. wheat flour;

• a small pinch of powdered muscat, salt and vanillin (sugar).

Cooking method:

1. Put the cherry in a colander and leave it in it so that excess moisture comes off. Melt the butter in a little heat and then cool.

2. Rub the cottage cheese into a bowl through a sieve and dilute it with milk. Add the butter, break the eggs and mix the curd thoroughly.

3. In a separate bowl, transfer the flour and mix it with a cultivator for the dough. Add vanilla and regular sugar, add nutmeg and mix well.

4. Pour the curd into the flour and mix thoroughly with a whisk or spoon. Add the cherries and mix the dough again.

5. Fill two-thirds of the small silicone molds for the muffins with the curd dough, rearrange them on a baking sheet and immediately put them into the preheated oven.

6. Bake cottage cheese muffins with cherries for about half an hour at 200 degrees.

Dietary oat muffins with cherries

Ingredients:

• 100 gr. fresh or frozen (seedless) cherries;

• 200 gr. low fat cottage cheese;

• low fat sour cream - 2 tbsp. l .;

• one fresh egg;

• a glass of oatmeal for instant cooking;

• a tablespoon of buckwheat honey;

• soda, as a cultivator;

• vanilla or vanilla sugar.

Cooking method:

1. Dry the cherries well in a colander.

2. Mix the grated cottage cheese with sour cream and egg. Add the oatmeal, pour 4-5 a pinch of soda and, stirring thoroughly, let the mixture stand for a quarter of an hour.

3. Then add the honey melted in the steam bath. Salt by adding a small pinch of salt to the dough. Pour the vanillin, dip the dried cherries and stir well.

4. Pour the finished dough into silicone molds greased with vegetable oil and put in a hot oven. The recommended baking mode is 180 degrees.

5. After 25 minutes, the wonderful Cherry Diet Muffins will be ready.

Kefir corn muffins with kefir

Ingredients:

• baking white flour - 150 gr.;

• 125 gr. cornmeal;

• 240 ml of warm 2.5% kefir;

• eggs - 1 pc.;

• 150 gr. fresh cherries;

• 60 ml of refined lean vegetable oil;

• two teaspoons of baking powder;

• 100 gr. granulated sugar, white;

• vanilla (powder) - to taste.

Cooking method:

1. Rinse the cherries under the tap and remove the seeds from the berries. Cut each berry in half and transfer to a sieve.

2. Combine both types of flour and transplant twice on a sieve together with baking powder, fine salt and vanilla, pour sugar.

3. In a separate bowl, beat the eggs with slightly warmed kefir. Pour in vegetable oil and whisk again intensively. Pour the mixture into a bowl of wheat and corn flour and stir. Try to break each lump of the flour that has gone astray. It is more convenient to do this with a whisk, slightly whipping the mass.

4. Mix the dough with halves of the cherries and pour over the greased molds on the margarine.

5. Bake muffins when heated 200 degrees, for a quarter of an hour.

Chocolate Muffins with Cherry - Golden Mean

Ingredients:

• half a glass of melted "Peasant" oil;

• one chicken egg;

• 250 gr. white baking flour;

• 120 gr. pitted cherries;

• one and a half glasses of high-calorie sour cream;

• granulated sugar - 150 g .;

• half a glass of cocoa powder;

• a teaspoon of baking powder;

• vanilla - 1 pod;

• chocolate "droplets" - half a glass.

Cooking method:

1. Transplant the flour with the cultivator. Add cocoa powder, salt, coffee grinder, vanilla bean and sugar. Pour chocolate "droplets" and mix well all loose components.

2. Separately, beat the sour cream with the egg and gradually, without stopping stirring, add the melted butter to the mixture.

3. Then, in small amounts, pour the mixed dry ingredients into a sour cream mixture and, after thoroughly beating, leave for half an hour to “infuse”.

4. Lubricate muffin baking tins with butter or margarine and put in them the prepared chocolate dough. In the center of each tin, put a cherry and slightly “immerse” it.

5. Bake chocolate muffins with cherries in the oven at 190 degrees, 20 minutes.

Muffins with cherry on yogurt with berry juice

Ingredients:

• one and a half glasses of homemade yogurt;

• wheat flour - 550 gr.;

• fresh or freshly frozen cherries;

• three chicken eggs;

• sugar - 180 gr.;

• two tablespoons of purified sunflower oil;

• two tablespoons of starch;

• melted butter, 72%, butter - 60 grams;

• rippers - 1 tsp. factory "Baking powder" and half of this amount of soda;

• quarter tsp salts;

• icing sugar;

• a full spoon of blackcurrant or cherry juice.

Cooking method:

1. If the cherry is freshly frozen, thaw it in advance. Be sure to remove the seeds from the ripe, but first rinse the berries well and dry them.

2. Mix well the loose ingredients: sifted flour, salt and starch.

3. In a separate bowl, beat the eggs until foam. Pour in them yogurt with cold melted butter, berry juice and mix thoroughly.

4. Then pour the loose mass into the liquid mixture and beat well with a whisk, carefully observing the uniformity of its consistency.

5. Lubricate silicone molds of a suitable size with any grease and pour the cooked dough on them. It should fill each, only one third of the volume.

6. Then put two cherries on the dough in each tin, and add them with the remaining dough, adding about one third to the edges.

7. Bake cherry muffins for 20 minutes at 190 degrees. After, lay out the products from the molds and, after cooling, sprinkle them with powdered sugar.

Cherry and Cream Muffins

Ingredients

In cream:

• 200 ml of pasteurized cow's milk;

• an incomplete tablespoon of flour;

• 70 gr. refined sugar;

• 10 gr. vanilla sugar;

• one raw egg and yolk.

Dough for muffins:

• creamy margarine - 180 grams;

• eggs - 2 pcs.;

• a full glass of sugar;

• one and a half glasses of high-quality flour;

• 10 gr. baking powder for dough;

• ripe fresh cherry 150-200 gr.

Cooking method:

1. In a small bowl, add granulated sugar intended for cream. Add the yolks separated from the proteins, flour and rub well with a spoon until the crystals dissolve.

2. Boil the milk separately and pour it in a thin stream with constant stirring in the egg mixture. After this, beat the mass well. It should be smooth and uniform.

3. Put the cream on a small fire and boil, stirring constantly, until it thickens well. Then remove the saucepan with cream from the heat, introduce vanillin into it and refrigerate by placing the container in another filled with cold water.

4. When the cream has been prepared, start kneading the dough for the muffins. Beat the whites with 1/3 part sugar in a foam with a mixer.

5. Separately with the remaining sugar, beat the butter, add the yolks and beat well again. Gently inject whipped proteins into the oil mixture and gently mix everything with a spatula, no longer whipping.

6. Then add the flour mixed with the cultivator and also mix gently. The result is a non-liquid, fairly thick, but at the same time loose pastry.

7. Moisten muffins with vegetable oil. At the bottom of each, put a circle of oiled parchment.

8. Then put a little cooked dough, a teaspoon of the remaining cream on it and cover it with dough.

9. Do not fill the forms with dough to the brim, it should not reach them by about a centimeter.

10. Put a few cherries on top, slightly “dip” them in the dough and put the muffins to bake when heated to 190 degrees. Duration is 20-25 minutes.

11. Remove the finished muffins while still warm from the molds and remove the circles of paper from them.

Muffins with cherries, nuts and white chocolate

Ingredients:

• dried cherry - 60 gr.;

• 60 gr. walnut kernels;

• a large bar of white chocolate;

• one egg;

• a small (tea) spoon of a cultivator;

• 120 gr. refined sugar;

• 100 ml of medium fat sour cream;

• wheat flour - 300 gr.;

• 125 ml of homemade milk;

• thick homemade cream, or butter - 100 gr.

Cooking method:

1. Dilute the sour cream with milk. Pour melted and slightly chilled butter there, beat the egg and beat in a whisk or mixer.

2. Mix the sifted flour with a cultivator, pour in the liquid sour cream mixture and beat the dough well.

3. Add medium-sized crumbs of walnut kernels, small pieces of white chocolate. Put dry cherry and mix thoroughly with a large spoon.

4. Put the purchased paper bases of the appropriate size into the cupcake tins and place the dough on them. On top, as a decoration, put nuts and cherries.

5. Bake cherry muffins with chocolate and nuts for 20 minutes while heating 180 degrees.

6. Finished products cool slightly right in the molds. Then remove and transfer to the wire rack.

Cherry Muffins - Cooking Tips & Tips

• Curd for muffins on curd dough is better to take without grains. But if this is not found, grind granular on a very rare sieve.

• Be sure to mix the dry and liquid components separately and only then combine by introducing the dry mixture into the liquid. This is a kind of "highlight" of making muffins.

• When greasing molds with oil, do not grease the sides. Products will rise better, and their top will be neat, slightly convex.

• The dough should fill up to 2/3 of the volume of the form.

• If special paper blanks were put into molds, do not remove them from finished products. This is very convenient, especially if the pastries were prepared for children. An exception if you plan to decorate muffins. In this case, the paper should be removed.

• The top of the muffins can be decorated with icing, chocolate or covered with mastic, rolled out in a very thin layer.
