Mushrooms with onions - general principles of preparation

Champignons belong to those mushrooms that do not require preliminary boiling. You can immediately throw them into the pan and fry. But if you need to keep the mushrooms for some time in the refrigerator, it is better to immediately rinse and boil in boiling water for about ten minutes. Then the liquid is decanted and the product is hermetically packed; it can be folded into a regular container.

With onions, mushrooms are fried, stewed, baked. More often use onions. As additional ingredients, oils, sour cream, spices, various vegetables are usually used. Champignons go great with cereals, eggs, meat or chicken. The scope for imagination is really huge, as is the choice of recipes.

Recipe 1: Mushrooms with Onions and Cheese in the Oven

This dish of champignons with onions is not only tasty, but also amazingly beautiful. It can be safely put on a festive table. We choose mushrooms of the same size and always with closed hats.

Ingredients

• half a kilo of mushrooms;

• 2 onion heads;

• some oil;

• spices;

• 140 grams of cheese.

Cooking

1. Rinse all the champignons, remove the legs. Hats must remain intact.

2. Cut the legs into small pieces, fry in oil until almost ready.

3. Add the chopped onion to the legs of the mushrooms, let the pieces brown. We fill the filling with salt, pepper, cool. Other seasonings, dill, garlic can be added to taste.

4. Grate cheese and mix with cooled minced meat.

5. Fill the prepared legs with the prepared mass and transfer to a mold or to a small baking sheet.

6. Bake for about 25 minutes at 200 degrees. The exact time depends on the size of the mushrooms and the density of the stuffing stuffed, sometimes 15 minutes is enough.

Recipe 2: Simple Fried Mushrooms with Onions

The recipe for simple, quick, but very tasty fried mushrooms with onions in a pan. The dish is used independently, but is also suitable for vegetable, cereal side dishes.

Ingredients

• 0.7 kg of mushrooms;

• 4 tablespoons of olive oil;

• 0.2 kg of onions;

• 2 pinches of oregano;

• salt, other seasonings.

Cooking

1. Rinse, if necessary, peel the mushrooms and cut into slices about three millimeters.

2. Shred the onion heads with half rings, previously peeled.

3. Pour olive oil into the pan, let it warm up. You can use another oil, taking into account your taste.

4. Put the onions in the pan, lightly fry.

5. Lay the mushrooms, cook over moderate heat for about ten minutes.

6. Throw oregano, salt and fry for about four minutes until cooked.

Recipe 3: Mushrooms with onions in a pan in sour cream

The recipe for amazing mushrooms with onions in a creamy pan. For cooking, you will also need fat sour cream.

Ingredients

• 0.5 kg of mushrooms;

• 0.15 kg of onions;

• spices;

• 0.2 liters of sour cream;

• 50 ml of oil.

Cooking

1. We wash the washed mushrooms with any slices at our discretion, but do not make too small slices. Otherwise, the mushrooms will turn out dry.

2. Send the mushrooms in a pan with well-heated oil. Fry without a lid until the liquid is completely evaporated.

3. Shred the onions in half rings, add to the slices of mushrooms that have already begun to fry. Stir occasionally, brown.

4. The contents of the pan should be salted, sprinkled with pepper.

5. Add sour cream to the fried mushrooms and heat the dish under the lid for 10 minutes. Greens are added to the pan or to the plate with the finished dish, if desired.

Recipe 4: Mushrooms with Onions and Potatoes in the Oven

A popular dish of champignons with onions and all your favorite potatoes. If you use vegetable oil and do not sprinkle with cheese, then you can safely cook it in fasting.

Ingredients

• 0.4 kg of champignons;

• 0.1 kg of onions;

• 70 grams of plum oil;

• 0.6 kg of potatoes;

• 0.15 kg of cheese.

Cooking

1. Rinse, clean, cut mushrooms, throw off while in a bowl.

• 2 sweet peppers;

1. Washed mushrooms need to be cut into large pieces. If the champignons are small, then it can be cut in half or in four.

2. Spread in a frying pan with very well-heated oil, fry until half cooked.

3. Onions need to be cleaned, chopped with straws. We shift to half-prepared mushrooms.

4. Next we throw carrots, which we also cut into strips or chop on a grater, but only coarsely. Fry mushrooms with vegetables for about five minutes.

5. Add the Bulgarian pepper. We also cut it into strips, first you need to remove the seeds with an inner box.

6. Now you can salt, season the mushrooms with pepper. Fry until the end. This is about five minutes.

Recipe 6: Champignons with onions in a pan in a tomato

A variant of a dish of champignons with onions in a pan in an appetizing and thick sauce. The recipe indicates tomato paste. You can use mashed tomatoes, but in this case, the amount increases at least twice.

Ingredients

• 0.45 kg of champignons;

• 2-3 onion heads;

• butter and spices;

• 50 grams of pasta;

• 1 spoonful of flour.

1. Rinse, cut the mushrooms into slices, send them to fry in a skillet with oil until the liquid is completely evaporated.

Ingredients

• 1 chicken breast;

• 0.3 kg of champignons;

• 0.15 kg of onions;

• 300 ml low-fat cream;

• 0.5 bunch of dill;

• some salt and pepper;

• 1 spoon of flour;

• butter;

• 1 clove of garlic;

• 1 tsp sweet paprika.

Cooking

1. We cut not coarsely pre-washed, freed from all the excess mushrooms, we send to fry in a skillet. We pour a little oil.

2. After all the moisture has evaporated from the mushrooms, add the onion heads, cut into cubes. Lightly fry.

3. Cut the chicken into pieces, slightly larger than the mushrooms. Sprinkle with flour, send to another skillet with well-heated oil. Fry until crusty, then cover and let it cool for about five minutes.

4. Add to the chicken almost prepared mushrooms with fried onions. After combining the dish, salt the dish and pepper.

5. Heat the cream, pour over to the chicken.

6. Tomim over low heat until cooked.

7. At the very end, we throw paprika, add garlic and chopped herbs. Turn off.

Mushrooms with onions - useful tips and tricks

• After defrosting, a lot of moisture comes out of the mushrooms. If mushrooms are also bought in a store, then there is even more water. The mass of the product can be reduced by 40 or even 50%. This must be taken into account immediately and initially take more product.

• If you need to fry the mushrooms until crisp, then use the breading. You can also dip the pieces in the egg and alternately fry in oil on both sides.

• If you salt the mushrooms at the very beginning of cooking, they will release a lot of moisture.

• To prevent mushrooms from darkening during cooking, add a few crystals of citric acid or a little vinegar to the water. But it’s important not to overdo it, otherwise the cooking time will be delayed.

• If you need to peel a lot of onions, then you can pre-pour it with cold water. The husk after soaking will be easily removed.

• To avoid crying when peeling or slicing onions, you need to draw cold water into your mouth and hold it during the process. Periodically, the fluid is changed fresh.
